Fry the bacon in butter over medium heat until crispy.
Remove from pan and keep warm. Leave the fat that's accumulated in the pan. Lower the heat to medium low and fry the eggs in the same frying pan.
Place bacon, eggs, avocado, nuts, bell pepper and leaves on a plate.
Drizzle the remaining bacon fat on top of the eggs. Season to taste.

Walnuts, Brazil nuts, pecans and macadamia nuts are all lower-carb nut choices. Feel free to swap in your favorite. You can dry roast your nuts (about an hour in a 120'C oven) in batches for more crunch. Don't forget to add a little salt right after roasting!
In a medium sized bowl, combine the almond flour, psyllium powder (sorry... no substitutes: flaxseed meal won’t work), and salt.
Add in the eggs and stir until dough thickens. Add water (or marinara) to the bowl. Mix until well combined. Let sit for a minute or two until the dough gels up.
Separate into 10 balls (about 2 inches in diameter). Place the dough onto a piece of greased parchment paper.
Top with another greased piece of parchment. Using a rolling pin, roll the dough out in a circle shape with even thickness throughout. This dough is very forgiving, so if you don’t get the circle quite right with the rolling pin, use your hands to adjust it.
Heat a large pan over medium-high heat with coconut oil or coconut oil spray.

Separate the yolks from the egg whites and whip the egg whites and pinch of salt vigorously with a hand mixer. Continue whipping until stiff peaks form and then set aside.
In a separate bowl, whisk together yolks, oil and coconut milk.
Add coconut flour and baking powder. Mix into a smooth batter.
Ever so gently fold the egg whites into the batter. Let batter rest for 5 minutes.
Fry in butter for a couple of minutes or so on each side on low to medium heat.
Serve with melted butter and/or whipped cream and fresh berries.

In 2013 my husband, John, and I spent our 50th Wedding Anniversary in Hawaii. We had a major trip to North America planned for 2018.
UPDATE 2019. This year I'll be 80 years old. We never had our trip to USA. John died last year 20/04/18.
John and I moved to Christchurch in December 2015 to be near our only Grandchild. Ava -Jane is a wonderful gift to our family.
